The benefit of using frozen edamame in this dish is that it keeps the rest of the ingredients cold if cooler or fridge space is a concern. I can make it right before I head out the door and it's thawed and ready when I get to where I am going. If I am making it for home, I can just let it sit out on the counter and not worry about finding space in the fridge while I wait for flavors to develop. Edamame Salad
2 C frozen, shelled edamame
1 can black beans
1 can black eyed peas
1 small red onion diced
3 garlic cloves minced
1/2 bunch cilantro minced
3 limes juiced
1/4 C Olive oil
1 1/2 tsp cumin
1 1/2 tsp kosher salt
1 1/2 tsp fresh ground black pepper
Mix all ingredients together well. Let sit for an hour or so to let the flavors develop, then taste and adjust seasoning if necessary.
