Eat Something: Edamame Salad


At the request of many of my friends and family, I am posting the recipe for my Edamame Salad. This dish, while quite simple, is one that makes you sit back and wonder what it is that makes it taste so amazing. The flavors are bright and fresh, with just a bit of a bite and a hint of depth. It's my standby anytime someone asks me to bring a dish, not only due to the fact that everyone loves it, but it also gives me an opportunity to show my meat eating friends how delicious vegetarian (this is actually vegan) food can be.


The benefit of using frozen edamame in this dish is that it keeps the rest of the ingredients cold if cooler or fridge space is a concern. I can make it right before I head out the door and it's thawed and ready when I get to where I am going.  If I am making it for home, I can just let it sit out on the counter and not worry about finding space in the fridge while I wait for flavors to develop.  I sincerely hope you take the time to make it.


Edamame Salad

2 C frozen, shelled edamame
1 can black beans
1 can black eyed peas
1 small red onion diced
3 garlic cloves minced
1/2 bunch cilantro minced
3 limes juiced
1/4 C Olive oil
1 1/2 tsp cumin
1 1/2 tsp kosher salt
1 1/2 tsp fresh ground black pepper

Mix all ingredients together well. Let sit for an hour or so to let the flavors develop, then taste and adjust seasoning if necessary.
